Versiamo quindi nel guscio di biscotti ed inforniamo in forno già caldo a 180° per 50 minuti circa, facciamo la prova inserendo nella parte centrale la lama di un coltello per capire se la crema si è solidificata abbastanza.</span></p><p style="text-align: center;"><span style="font-family: courier;">Sforniamo e lasciamo raffreddare bene prima di toglierla dallo stampo.</span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><p style="text-align: center;"><span style="font-family: courier;">Nel frattempo prepariamo la composta di pesche</span></p><p style="text-align: center;"><span style="font-family: courier;">500 g di pesche a tocchetti</span></p><p style="text-align: center;"><span style="font-family: courier;">25 g di acqua</span></p><p style="text-align: center;"><span style="font-family: courier;">70 g di zucchero</span></p><p style="text-align: center;"><span style="font-family: courier;">Mettiamo tutto in una casseruola e lasciamo sul<br /></span><span style="font-family: courier;">fuoco fino a quando le pesche saranno belle morbide e si sarà formato un sughetto denso, lasciamo raffreddare ed al momento di servire decoriamo ogni fetta di torta, oppure possiamo decorare l'intera torta dando un tocco di colore in più con qualche fogliolina di menta.</span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><div class="separator" style="clear: both; text-align: center;"><br /></div></span><p></p><p style="text-align: center;"><span style="font-family: courier;">Quando voglio fare un dolce per la mia famiglia e voglio essere sicura che piaccia a tutti non posso far altro che optare per il cioccolato, così per San Valentino ho fatto questo bel cuore rosso che è sparito in un batter d'occhio.</span></p><p style="text-align: center;"><span style="font-family: courier;">La base del dolce è la Crema Pasticcera a cui verra poi aggiunto il cioccolato fondente e la pasta di pistacchio, ci sarà anche una base di brownie.</span></p><p style="text-align: center;"><span style="font-family: courier;">Ecco cosa ci servira per la Crema Pasticcera:</span></p><p style="text-align: center;"><span style="font-family: courier;">500 g di latte</span></p><p style="text-align: center;"><span style="font-family: courier;">120 g di zucchero</span></p><p style="text-align: center;"><span style="font-family: courier;">120 g di amido di mais</span></p><p style="text-align: center;"><span style="font-family: courier;">250 g di tuorli</span></p><p style="text-align: center;"><span style="font-family: courier;">semi di vaniglia</span></p><p style="text-align: center;"><span style="font-family: courier;">Facciamo in questo modo: in un contenitore che vada bene per il microonde mettiamo i tuorli assieme allo zucchero, sbattiamo un po' con una frusta, aggiungiamo quindi l'amido e mescoliamo di nuovo, per ultimi aggiungiamo latte e vaniglia, dopo aver amalgamato bene mettiamo nel forno a microonde per un minuto e mezzo, quindi sempre con la frusta torniamo a dare una bella mescolata e rimettiamo dentro, e continuiamo cosi fino a quando la crema avrà raggiunto una bella consistenza cremosa.</span></p><p style="text-align: center;"><span style="font-family: courier;">A questo punto prepariamo l'inserto al pistacchio:</span></p><p style="text-align: center;"><span style="font-family: courier;">250 g di Crema Pasticcera</span></p><p style="text-align: center;"><span style="font-family: courier;">70 g di pasta di pistacchio</span></p><p style="text-align: center;"><span style="font-family: courier;">5 g di colla di pesce</span></p><p style="text-align: center;"><span style="font-family: courier;">250 g di panna semimontata</span></p><p style="text-align: center;"><span style="font-family: courier;">Pesiamo 250 g di crema e, quando è ancora bella calda, uniamo la colla di pesce precedentemente ammollata e anche la pasta di pistacchi, amalgamiamo bene, lasciamo raffreddare e aggiungiamo la panna, mettiamo negli stampi che abbiamo scelto e facciamo congelare.</span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><p style="text-align: center;"><span style="font-family: courier;">Per la mousse al cioccolato ci servirà:</span></p><p style="text-align: center;"><span style="font-family: courier;">250 g di Crema Pasticcera</span></p><p style="text-align: center;"><span style="font-family: courier;">190 g di buon cioccolato fondente</span></p><p style="text-align: center;"><span style="font-family: courier;">345 g di panna semimontata</span></p><p style="text-align: center;"><span style="font-family: courier;">2 g di colla di pesce</span></p><p style="text-align: center;"><span style="font-family: courier;">Facciamo fondere il cioccolato fondente, nel frattempo uniamo alla crema ancora calda la colla di pesce precedentemente ammollata, quindi uniamo anche il cioccolato fuso e quando sarà freddo uniamo la panna semimontata.</span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><p style="text-align: center;"><span style="font-family: courier;">L'ultima preparazione che ci aspetta è il brownie:</span></p><p style="text-align: center;"><span style="font-family: courier;">160 g di uova</span></p><p style="text-align: center;"><span style="font-family: courier;">100 g di buon cioccolato fondente</span></p><p style="text-align: center;"><span style="font-family: courier;">50 g di zucchero</span></p><p style="text-align: center;"><span style="font-family: courier;">50 g di burro</span></p><p style="text-align: center;"><span style="font-family: courier;">30 g di farina</span></p><p style="text-align: center;"><span style="font-family: courier;">un pizzico di sale</span></p><p style="text-align: center;"><span style="font-family: courier;">un cucchiaino di lievito chimico</span></p><p style="text-align: center;"><span style="font-family: courier;">Facciamo fondere il cioccolato, aggiungiamo quindi il burro ed amalgamiamo bene, a questo punto uniamo i tuorli in due volte e amalgamiamo bene. Uniamo quindi anche la farina, nel frattempo montiamo a neve glia albumi assieme allo zucchero, uniamo quindi delicatamente i due composti.</span></p><p style="text-align: center;"><span style="font-family: courier;">Imburriamo ed infariniamo uno stampo di circa 15 x 25 cm e versiamo il composto, cuociamo a 180° per 15/20 minuti circa, controlliamo per non rischiare che si asciughi troppo.</span></p><p style="text-align: center;"><span style="font-family: courier;">A questo punto non ci resta che assemblare il dolce, prendiamo lo stampo desiderato, versiamo un po' di mousse al cioccolato, mettiamo al centro la mousse al pistacchio congelata, copriamo con dell'altra mousse al cioccolato e quindi una base di brownie.</span></p><p style="text-align: center;"><span style="font-family: courier;">Congeliamo il tutto.</span></p><p style="text-align: center;"><span style="font-family: courier;">Per la glassa a specchio:</span></p><p style="text-align: center;"><span style="font-family: courier;">85 g di acqua</span></p><p style="text-align: center;"><span style="font-family: courier;">150 g di zucchero</span></p><p style="text-align: center;"><span style="font-family: courier;">150 g di glucosio</span></p><p style="text-align: center;"><span style="font-family: courier;">100 g di latte condensato</span></p><p style="text-align: center;"><span style="font-family: courier;">12,5 g di colla di pesce</span></p><p style="text-align: center;"><span style="font-family: courier;">150 g di cioccolato bianco</span></p><p style="text-align: center;"><span style="font-family: courier;">colorante a piacere</span></p><p style="text-align: center;"><span style="font-family: courier;">Mettiamo in pentolino l'acqua, il glucosio, lo zucchero, quando si sarà ben sciolto lo zucchero uniamo la colla di pesce precedentemente ammollata e il latte condensato, unire a questo punto il cioccolato precedentemente sciolto ed il colorante. Amalgamare bene il tutto e passare con il minipimer senza inglobare aria.</span></p><p style="text-align: center;"><span style="font-family: courier;">Copriamo con la pellicola e facciamo raffreddare in frigo per almeno 12 ore.</span></p><p style="text-align: center;"><span style="font-family: courier;">Quattro ore circa prima di servire il dolce, togliamolo dal congelatore, scaldiamo la glassa fino ad arrivare a 30° e glassiamo il dolce. </span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span><span style="font-family: courier;"></span></p><div class="separator" style="clear: both; A "ricreazione", anche in DAD, mangiano volentieri qualcosa di salato, così ho preparato questi muffin che ricordano un po' il sapore della pizza. Ecco ciò che ci serve:</span></p><p style="text-align: center;"><span style="font-family: courier;">200 </span><span style="font-family: courier;">g di farina tipo 1</span></p><p style="text-align: center;"><span style="font-family: courier;">1 bustina di lievito per torte salate</span></p><p style="text-align: center;"><span style="font-family: courier;">20 g di parmigiano grattugiato</span></p><p style="text-align: center;"><span style="font-family: courier;">120 g di mozzarella</span></p><p style="text-align: center;"><span style="font-family: courier;">origano</span></p><p style="text-align: center;"><span style="font-family: courier;">3 uova </span></p><p style="text-align: center;"><span style="font-family: courier;">100 g di passata rustica di pomodoro</span></p><p style="text-align: center;"><span style="font-family: courier;">30 g di olio e.v.o.</span></p><p style="text-align: center;"><span style="font-family: courier;">200 g di yogurt greco magro</span></p><p style="text-align: center;"><span style="font-family: courier;">Come per tutti i muffii mettiamo in una terrina tutti gli ingredienti secchi, compresa la mozzarella scolata e tagliata a piccoli pezzi e mescoliamo.</span></p><p style="text-align: center;"><span style="font-family: courier;">In un altro recipiente mettiamo: uova, passata di pomodoro, </span><span style="font-family: courier;">yogurt e olio ed amalgamiamo bene.</span></p><p style="text-align: center;"><span style="font-family: courier;">A questo punto versiamo gli ingredienti liquidi sopra alle polveri e amalgamiamo per rendere il composto omogeneo.</span></p><p style="text-align: center;"><span style="font-family: courier;">Mettiamo nello stampo per muffin, decoriamo a piacimento, magari con delle fettine di pomodoro e un po' di ormano ed inforniamo a 180° per 25 minuti circa, facciamo la prova stecchino prima di sfornare e lasciamo raffreddare su una gratella.</span></p><p style="text-align: center;"><span style="font-family: courier;"><br /></span></p><div class="separator" style="clear: both;
